Bahulu Batik Mekar Kukus

Salaam….

Hari tu tengok dekat blog Mamafami, bahulu batik yang dia buat betul2 mekar, mengancam sungguh. Rupa2nya, barulahku tahu, banyak versi bahulu ni rupanya. Ingatkan bahulu ni yg macam bahulu2 tradisional jer. Tapi kalau tak silap, ada jugak yang panggil bahulu mekar ni apam/apom. Apapun , tak kisahlah. Yang penting, projek bahulu mekarku terhasillah jua, walaupun dia tak habis mekar lagi. Nothing more I can say, thank you Mamafami & kakfida for sharing this sweet bahulu mekar. I paste the recipe just in case anybody want to give it a try (copied from mamafami, tq mamafami ).

Bahulu Mekar kukus

Ingredients (yields 12 – 14 pieces) :

125g flour
1 teaspoon baking powder
115g caster sugar
1/2 teaspoon (heap)ovallete
4 1/2 tablespoons fresh milk
1 egg (large)
1/2 teaspoon vanilla essence
1 teaspoon chocolate paste/emulco ** I omit, and put some pink coloring

Method :

1. Sift flour and baking powder into the mixer bowl.
2. Add in caster sugar, ovallete, fresh milk, egg and vanilla essence.
3. Whip at high speed till mixture thickens.
4. Divide the mixture into two equal portions. Add chocolate paste into one portion and leave the other plain.
5. Spoon the plain and chocolate mixture alternately into the prepared papercups till 3/4 full.
6. Steam at high temperature for 10 to 15 minutes. ** I steamed much longer

KEK MARBLE TRIO


Antara kek2 yang pernah dicuba resepinya, ini antara kek yang paling dekat dihatiku.. hehe, hatiku yer. Tapi memang kena dengan selera, bahaya kalau buat selalu nih!. Jumpa resepi ni dekat blog sapa lagi kalau bukan Mamafami. Mamafami pulak dapat dari  Ah Mat Gebu sifu masak2. Arigato gozaimass!!! hait!. KEK MARBLE TRIO

Ingredients :

300g butter
280g flour*
1 tablespoon milk powder*
1 teaspoon baking*(sift together all ingredients marked *)
5 large eggs
1 tablespoon ovalette (cake stabiliser)
250g castor sugar
50ml fresh milk
1 1/2 teaspoons chocolate emulco – I used cocoa powder
1 teaspoon strawberry emulco – I used rose coloring aje!
1 /2 teaspoon rose essence  – ni pun x de
a tint of pink coloring

METHOD :

1. Prepare an 8 x 8 x 3 inches cake tin. Grease the sides with butter and a bit of flour. Line the base with greaseproof paper.
2. Beat butter till pale in color. I beat manually. Add in flour, a little at a time till all flour are used and mixture is well mixed. Set aside.
3. In a mixing bowl (clean and dry), beat eggs and ovalette.
4. Add in sugar, a little at a time and continue beating on high speed till mixture is light and fluffy, like the chiffon mixture.
5. Reduce the speed and add in the butter and flour mixture, a little at a time.
6. Pour in the fresh milk and rose essence.
7. Divide the mixture into 3 equal portions. Add 1 portion with chocolate emulco. Another portion with strawberry emulco and a tint of pink coloring. Leave 1 portion plain.
8. Spoon 2 tablespoons of plain mixture onto the middle of the cake tin. Top it with 2 spoonful of pink mixture, followed by the chocolate mixture. Repeat the process until all the mixture are used up.
9. Bake in a preheated oven at 180 C for 40 to 45 minutes. – my oven is differ

Roti Jala dan Kuah Kari


Ini pun entri tertangguh. Ini sebenarnya dari kes rempeyek tersalah pakai tepung gandum la ni. Hari sebelum kejadiannya, bancuhan untuk rempeyek sudah tersilap lah!. Jadi, daripada buang bancuhan tu, sayang woo..ia sudah ditukarkan ke roti jala.. tada!!. Lepas masuk peti sejuk bancuhan tu, malam tu terfikir untuk transformkan bancuhan tadi ke something yang sesuai. Esoknya, dapatlah idea untuk jadikan dia roti jala. So, bancuhan tadi ditapis (sebab bancuhan rempeyek kan dah berrcampur dgn serba makneka tu – ikan bilis, jintan dsb) dan jadilah dia bancuhan baru. Kebetulan pulak sebelum ni menjengah blog Ilham dapur, dia punya roti jala cantiknya. Rupa2 nya dia gunakan botol sos yang plastik tu (botol kosong yg beli kat kedai tu.. ). Hmm apalagi, kena cuba ni, sebab sebelum ni dah beberapa kali buat pakai acuan roti jala tu, apa – tak menjadi kak kiah!. Apalagi, operasi menebuk pun dijalankan dan hasilnya, memang menjadik. Gumbiranya rasa di dalam hati!. Thanks to ilhamdapur, for sharing the way to ’menjala’ that roti jala. Tapi roti jala ni tak secantik yang ilhamdapur punya, sebab saiz dia kecik sangat. Kuali yang diguna tu kecik sangat, kebetulan pulak nak test kuali redeem dari Giant. Hehe.

Tumpi Kacang Hijau

Salam, again.

I’ve tried making this rempeyek sometime in May, or April. First time in my life, I finally made my own rempeyek. Cayalah. I came across the recipe from the ‘debom bam bom’ blog, our pakcik mat gebu. So many thanks to you uncle mat, for sharing your mum’s recipe. Here, I copied and paste the recipe from uncle mat. But I only made half of the ingredients.


Tumpi/ rempeyek:

Sumber: Mat gebu

500 g tepung beras
1/2 cawan tepung sagu ubi
1 biji kelapa, diparut
Kapur sireh sebesar ulas jagung
1 biji telur
Garam secukup rasa

Bahan Kisar:-
4 – 5 ulas bawang putih
1/2 cawan ketumbar biji
1 camca besar jintan kasar
1 camca besar jintan halus
2 camca besar udang kering, rendam 5 minit dan toskan
1 camca besar ikan bilis, rendam 5 minit dan toskan

Cara membuatnya:-

  1. Kelapa parut diperah santan secukupnya (lebih kurang 1.5 liter). Ketepikan. Dalam satu bekas, satukan tepung beras, tepung ubi dan bahan kisar. Larutkan kapur dengan sedikit santan. Masukkan dalam tepung tadi.
  2. Tuang santan sedikit demi sedikit sambil dikacau menggunakan wisk hingga adunan sempurna kepekatannya. Kalau bonda mat, dia kata kalau kita celup senduk dan angkat, belakang senduk tu akan meninggalkan satu lapisan nipis adunan tepung, kira dah ok…
  3. Perasakan dengan garam, jangan letak banyak2 dulu kerana udang kering dan ikan bilis tu dah masin. Adunan siap untuk ditebar tepi kuali atau menggunakan acuan macam piring tu.
  4. Terpulang sama ada ingin menggunakan kacang tanah, kacang hijau atau kacang dhal…Jika gunakan kacang hijau, cuci dan rendam terlebih dahulu untuk kurang lebih 6 jam, begitu juga kacang dhal perlu direndam (tapi tatau pulak berapa lama nak rendam, sebab tak pernah buat tumpi kacang dhal)…

By the way, I made the kacang hijau rempeyek, and I think I’m gonna make it more before the hari raya.. J. Cumanya, ada certain rempeyek yang tak begitu garing – sebab kepingan dia tebal skit. Cara menebar dekat kuali tu rasanya perlu diperbetulkan ni, maklumla, main sesuka hati sesedap rasa saje.

Actually, there’s a story  behind the scene, hehe. A few days after all the rempeyek is ‘gone’ (it only last for 1 day!!) , I feel that I’m gonna make it for the 2nd round. Highly confidence, I combined all the ingredients and started to fry it. But, the result is not f a kind, I wonder what went wrong. The rempeyek stick really hard to the pan. And after considering all the fact, I realize that I’m using the flour, not the rice flour!!!!.. waaaa…..hahaha. Very frustrated, I just kept the rest of the batter in the fridge. Ingat, jangan terlalu over confident!… haha, and I will keep it in my mind, tepung beras2!!!!…

Roti Naisu

Roti Naisu

Salam, all.

Lama sungguh tak dikemaskini blogku ini. Urlnya 1000rasa, tapi tak terasa2 rasanya..

By the way, hari tu ada buat naisu bun. Lama jugak teringin nak buat naisu bun ni, tapi ntah kenapa hari tu baru berlaku kejadiannya. Resepi ni mulanya terjumpa di weblog Mamafami, aduh2.. foto2nya begitu mengujakan!.Dan Mamafami rasanya dapat dari blogger lain. Bila dah berjaya membakarnya hari tu, wahh, gebunya. Memang sodapp. Tambah2 lagi makan panas2, bersama air kopi / teh, mmm, mmm, mmm. Resepinya di salin terus dari Mamafami, thanks Mamafami, I just copy n paste here.

NAISU BUNS

Ingredients :

250g high protein flour (I used allpurpose flour)
*1/2 teaspoon instant dried yeast
1/2 teaspoon bread improver
50g sugar
20g milk powder
*100 ml fresh milk
1/2 teaspoon salt
50g butter  *

1 egg
75g water roux
1 recipe Naisu *

Method : (Breadmaker method)

1. Pour fresh milk into the breadmaker pan. Add in salt, sugar, egg and water roux.
2. Top it with sifted flour, milk powder, dry yeast and bread improver.
3. Set the Breadmaker to Dough function.
4. Once the dough is just combined, add in butter and leave the Breadmaker to continue doing it’s job. This process will take about 1 1/2 hour including proving.
5. Remove dough from BM and punch down to release the air. Cut the dough 60g portion each. (next time round, I am going to cut the dough into 35g portions to get a ‘cuter’ sized Naisu Buns). Make into round balls and leave to rest for 15 minutes.
6. Flatten the balls and spread the Naisu on top. Roll the dough. Fold in half and cut in the middle. Open it to form a flower shape and place in a muffin cup lined with papercups.
7. Leave to proof till double the size.
8. Sprinkle with a bit of water just before putting the buns into the preheated oven at 180 C. Bake for 20 minutes or till golden brown.
9. Brush with a bit of butter, once out of the oven.

And since I don’t have a BM at the moment (hope to get it, someday!) , I just combined all the ingredients (except for the *), mixed well. Lepas tu lubangkan di tengah2 bahan tadi, masukkan telur, gaul rata. Kemudian, tambah fresh milk + yis. Uli hingga jadi doh. Kemudian, masukkan butter dan teruskan uli hingga jadi doh yang lembut. Biarkan doh naik, dalam 45minit. Tutup dengan kitchen towel bersih. Then, I follow the step from 5-9 above.

Apam Marmar

Salaam,

Apam marmar ni dah di buat pada 5/5 yang lepas lagi. Tapi itulah, baru nak di masukkan entinya. Apapun, untuk kesekian kalinya, resepi di ambil dari blog Mamafami yang memang macam2 adaa tu.. thanks again, for your lovely recipe. Just copy n paste here. But then, the appearance, of course..haha.. but never judge the apam by its cover… hehe..rasanya kena steam lagi lama, sebab dia tak mekar mcm mamafami buat, maklumla kukus pakai periuk jer.. tapi kan, walaupun ghupamu begitu, namun rasamu tetap gebu, lembut2 gitu.

APAM MARMAR

Ingredients : (Size 8 inch chiffon tin)

250 g self raising flour
200 ml coconut milk
170 g castor sugar
2 large eggs
1 teaspoon vanilla essence
1 teaspoon ovallette
a pinch of salt
Food coloring, green, pink, yellow

Method :

1. Place all the ingredients except food coloring in a mixing bowl.
2. Beat on low speed till the ingredients are well incorporated.
3. Increast to high speed and beat till fluffy and thick.
4. Divide to 4 portions. Add color to the 3 portions and leave the other one plain.
5. Grease the tin with butter. Spoon each color on top of the other. Repeat till all the mixture have been used.
6. Steam for 45 minutes.
7. Leave to cool before cutting.
